How do you convert a recipe to a different cake pan?
Find the volume of both pans using the round pan formula, pi times radius squared times height, then divide the new pan volume by the original pan volume to get a scaling ratio.
What is the ratio for an 8 inch pan recipe used in a 10 inch pan of the same height?
The scaling ratio is about 1.5625, meaning about 156 percent of the original ingredient amounts are needed.
Does pan height matter as much as diameter?
