Molecular SO2 is the portion of free sulfur dioxide in wine that acts as the active antimicrobial preservative, and it depends on both the free SO2 level and the wine pH.
What is the molecular SO2 for 29 mg/L free SO2 at pH 3.2?
That combination gives a molecular SO2 of about 1.1 mg/L, close to a commonly targeted preservation level.
Why does wine pH affect molecular SO2 so much?
