What is the associative property?

The associative property says that for addition or multiplication, regrouping the numbers being combined does not change the result: a + (b + c) = (a + b) + c, and the same holds for multiplication.

Why does regrouping ever matter, if the answer is the same?

The answer is always the same, but one grouping can be much easier to compute mentally than the other. For example, 13 + (7 + 19) lets you add 7 and 19 first to get a round 20, making the final addition simpler.

Does the associative property work for subtraction or division?

No. Subtraction and division are not associative, changing the grouping changes the result, for example (10 - 5) - 2 = 3 but 10 - (5 - 2) = 7.
