What is a UK gas mark?
Gas mark is a temperature scale used on many UK and some other European gas ovens, running from a low gas mark 1 up through gas mark 9, rather than a direct Celsius or Fahrenheit dial.
Is convection oven temperature the same as a standard recipe temperature?
No — convection ovens circulate hot air and cook more efficiently, so many cooks reduce the recipe temperature by about 20 degrees Fahrenheit, or roughly 10 to 15 degrees Celsius, when using a convection setting.
Why might my oven run hotter or cooler than its dial setting?
Many household ovens have some degree of temperature drift from their displayed setting — using a separate oven thermometer is the most reliable way to confirm actual internal oven temperature.
