What is specific gravity in brewing?
Specific gravity measures the density of the liquid relative to water, which decreases as sugar is converted to alcohol during fermentation — tracking this change is the standard way homebrewers estimate final alcohol content.
Why does original gravity need to be higher than final gravity?
As yeast consumes sugar and produces alcohol and carbon dioxide during fermentation, the liquid density decreases, so original gravity should always be higher than final gravity in a successfully fermenting batch.
How accurate is the 131.25 multiplier formula?
This simplified linear formula is reasonably accurate for most homebrew beer in typical strength ranges, though more precise formulas exist for very high-gravity brews like strong ales or wines, where the relationship becomes slightly non-linear.
