Why is a bushel a weight-based unit here instead of a volume?
A bushel is officially a volume measure, but in grain trading it is commonly quoted using a standard weight per bushel for each crop, since that weight is what a bushel of that crop typically weighs at standard moisture.
Why do different crops have different bushel weights?
Bushel weights were standardized based on each crop typical density at standard moisture content, so a bushel of a dense grain like wheat weighs more than a bushel of a lighter grain like oats.
