Why can a high-GI food still have a low glycemic load?

A food can have a high glycemic index but a low carbohydrate content per typical serving, resulting in a low overall glycemic load. Watermelon is a classic example: high GI, but low carb content per serving, so its glycemic load is low.

Where do I find a food glycemic index value?

Glycemic index values are published in nutrition research databases and many diabetes and nutrition resources. Values can vary somewhat by ripeness, preparation method, and specific variety.

What glycemic load range should I aim for?
